Description

英國皇室御用的Donald Russell,產品不含人造色素、添味劑、防腐劑。羊西冷、羊架、斧頭牛肉眼和本港罕有的進口野生禽類,絕對不失英國皇室的上等氣派。


DR威靈頓牛柳用嘅係28日乾式熟成嘅"草飼牛",牛柳係用Center Cut,其中一個最嫩滑嘅部位🤤
配以蘑菇、洋蔥、紅蔥頭同埋牛油等,再用人手以精巧技術包裝在酥皮內
烹調方法:
放進雪櫃(保鮮格)解凍24小時
小心解開包裝,因酥皮已軟身,將牛柳放於烘焙紙上,置室溫約20分鐘,預熱焗爐至220ºC。 將威靈頓牛柳連烘焙紙放入已預熱的烤盤中焗製, (在酥皮面塗上打散的蛋黃液令顏色更金黃):
一成熟(Rare)               19 - 21分鍾
五成熟(Medium)          28 - 30分鐘
全熟(Well Done)          32 - 34分鐘
出爐後,放置室溫10 to 15 分鐘後才上碟,可將肉汁鎖住,注意上碟前須小心撕開烘焙紙。
